When you camp do you use electricity? This recipe calls for electricity as it is made on an electric griddle, but as any avid camper will tell you, it can be changed up to make over a fire or camp stove too. We just choose to bring our griddle with to make mornings like these a little easier.
There is nothing special about this recipe, and it is one that you probably already use at home, but the smell of this breakfast will wake anybody up, and just screams camping.
Fried Egg Sandwiches
1 English Muffin
2 pieces (pre cooked) bacon
Leftover bacon grease
Cheese - Sliced
Handful Hash browns- thawed
Salt & Pepper
First be sure to pre-cook your bacon at home before you leave for your camping trip, you can thank me later. Take a small gladware container and fill it with cooled bacon grease.
Set your large electric griddle to 400, let heat up. Butter the insides of an English Muffin and place in one corner of griddle to toast. In lower corner add a spoonful of bacon grease (leftover from home) and crack egg into the grease. You can cook the egg how your family likes them, ours are over hard. Add salt & pepper to taste right into the egg. Place two strips bacon on the griddle to heat up. On the other side add your thawed hash browns into a doughnut shape. Add a glop of butter into the center, season with salt & pepper to taste.
At this point everything is cooking. Check English Muffins to make sure they are not burning. Pull off griddle when a delicious golden brown color. When they are brown, you can butter them again, or leave plain, set them onto a plate. It should be about time to flip your egg and bacon at that point, and then gently turn the hash browns over to get the other side nice and golden brown too.
Once everything is finished cooking, assemble the sandwich. Flip open the English Muffin, place a piece of sliced cheese on the bottom, add the hot egg, then the bacon, and if you wish, a second piece of cheese and the top of the muffin. Flip the hash browns onto the plate next to the sandwich. Serve to starving family after smelling all the good food.
You can cater this sandwich to each family member very easily. You can add fried onions, fried mushrooms, different flavors of cheese (think pepper jack), toast instead of muffins the possibilities are endless. Great, now I am hungry...
